Who We Are

We are a tiny company located along the Colorado Front Range. We have a couple of greenhouses for our peppers located in Centennial, CO and our kitchen is located in Monument, CO.  

 

We believe we have lost something special in a lot of the food we buy at the market: Flavor and nutrition!  That's why we work so hard to grow and use only the best organic farm-to-table produce for everything we make. The Pious Pith is rooted in the belief that we need to return to the timeless practices of growing, preserving, pickling, and preparing food naturally and locally in order to enrich and preserve our community, traditions, and flavors. We can accomplish a lot through food! 

 

To stay faithful to these beliefs, we grow most of of our own peppers and what we don't grow we purchase from our local farmers. We use the ancient process of lacto-fermentation to develop unique and intense vinegars and flavors. We ferment everything for 3 to 6 months or longer and we start simply with pure spring water and kosher salt and then we let the natural process of lacto-fermentation transform it into the amazing vinegars, sauces, and pickled produce that are packed with flavor and probiotics.  We plan on providing some recipes and maybe even some how-to videos.

Since our founding in 2023, we have had quite a few setbacks to overcome with property, family health, and finances.  We're figuring things out and slowly but surely we are moving towards growing and officially opening in 2025. This years harvest was great with a large yield of Scotch Bonnet and Aji Amarillo peppers for our current sauce in development, hint....it has passion fruit in it.

 

We look forward to making the best flavors out there.
